    Since 2013, our company has been producing starter cultures for baking sourdough yeast-free breads as well as leavened drinks of natural fermentation under such trademarks as "Khleborost" until 2019 and "POLYFOOD" The main principles of our company is the use of only natural products and raw materials without chemical additives. We produce starter cultures in the protected mountains of the Caucasus, where temperature, humidity, biosphere and spring water are literally everything designed for the active growth of our starter cultures. Here the starter cultures gain the energy of nature, and then they wake up from a dormant state already in your bread. For the production of our starter cultures, we purchase grain from trusted manufacturers, which is ground on stone millstones without exceeding the temperature barrier of 38 ° C. Grain is grown according to the so-called "ploughless technologies" of Anatoly Ivanovich Shugurov. These technologies make it possible not to process the land, grain at all stages of cultivation, storage and grinding with pesticides, anti-tracers and other chemical fertilizers. Next, the grain is sifted on a special filter, where only the best grain is selected ready for grinding, where up to 98% of the grain goes into flour. This flour is called "Skinned", it retains all the useful elements of the grain. At this stage, we take up the case. In our storage there are many varieties of starter cultures, with which we ferment flour in special, strictly classified conditions.
