Description

Acidness 80% Sweetness 90% Burnt 30% of coffee is processed at a modern central drying station, oriented exclusively on natural products. This coffee is based on the taste profile, and not tied to a certain place. Coffee can come from different places, but should always comply with quality and trackability criteria. All farmers who supply coffee berries are involved in the Procurement Program in the parishes (local villages) in Raytec. The coffee berner is selected on the basis of quality assurance programs and sustainable development involving small landowners. After receiving coffee berries they are soaked and dried on raised beds with continuous sorting. Drying can take from 10 to 25 days depending on the amount of rain and the sun during the harvest.
