Coffee is grown in Colombia by the El Diamante de la Sierra Association, which was formed from a group of small producers in the Sierra Nevada region, Cienaga department. Sierra Nevada is located on the territory of a nature reserve with rich flora and fauna. Coffee grows here in a windy area, near the highest snowy peak of Colombia and at the same time only 10 kilometers from the Caribbean Sea. This is a very special environment that positively influences the final profile of the cup. This lot is washed processing. After depulpation, coffee was fermented for 18-24 hours in tanks, then dried under an awning for 8-15 days. We have chosen this coffee for those who want coffee in their establishment with high-quality acidity of washed coffee and purity of descriptors. The peculiarity of this coffee is that it is fried with an omni-roast profile, when coffee can be prepared with equal success both in espresso and in a filter.
