Yeast for Angel tortillas can improve the quality of the finished baking. Thanks to them, the finished products have a rich taste of languishing bread, elastic and dense crumb, uniform porosity and thin crust. They have high enzymatic activity. Designed for all types of dough science (sourdough and non-sourdough) in the production of various cakes and pita bread, as well as bread with a sugar content of 0 - 7%. Ingredients: fresh active yeast culture Saccharomyces cerevisiae. Advantages: • specially designed for the preparation of national bread products of Central Asian countries • have high enzymatic activity • give increased form stability to test blanks • do not require pre-activation • due to the absence of ascorbic acid in the composition, baked products are not compressed in the oven • give the crumb a uniform porosity • do not cause the appearance of a yeast odor in the finished product Application: mix yeast with flour, and then add other ingredients according to the recipe. The optimal fermentation temperature is 35-38 °C. Dosage: 0.3% - 1% by weight of flour.
