    Who we are: A big family in which both adults and children help each other to make cheese that can be recognized by taste among a hundred other cheeses. And it turns out this way also because the main cheese makers – Sasha and Lena Lebedev - are athletes in the past, that is, people who know how to work for the first place and the result. Sasha Lebedev is an international master of sports, champion of Russia, participant of the 2010 Winter Olympics, worked as a member of the organizing committee of the Sochi Olympics. Meanwhile, he received a second higher education. His sister Lena was a strong speed skater, a master of sports, worked in the Olympic Committee as the head of the Russian national speed skating team and also made a mark in Sochi. But I found the main vocation in the children: there are seven of them in the family. And everyone gradually gets used to the common cause and to work in general. Well, and to sports, of course. Where are we: Since 2015, our production has been located almost in the center of Moscow, on the Berezhkovskaya Embankment. It may seem unusual to someone, but for us everything is quite natural, because we are all Muscovites and do our business in our hometown. Of course, so far it is possible to provide fresh and delicious cheeses only to a relatively small number of restaurants and individual citizens. But we strive in every possible way to extend our cheese dominion to the whole city, and then, perhaps, to the whole world. How we work Intense and percussive. Every week, Berezhkovskaya Cheese Factory produces 2-3 tons of cheese, which means that you need to process 2-3 tons of milk per day. Now six people are constantly working in production, including the night shift. The production is specific, with many technical requirements and features. We produce the final product from pasteurized milk. Three tons is a large volume that needs to be stored under certain conditions. The most important thing is constant quality control of the source product. And in order to provide it once and for all, we dream of having our own herd of cows.
