Shanklish cheese made from cow's milk in olive oil with pepper / VERESHCHAGIN / Shanklish cheese is produced along the entire Syrian coast in northern Lebanon, but Shanklish from the city of Tartus, 220 km northwest of Damascus, is recognized as the best. Traditionally, Shanklish was prepared at home from goat's milk: the milk was fermented into yogurt, slowly and for a long time heated until stratification. What remained on the fabric was salted and rolled into balls, rolled in spices (most often in eastern spices - zaatar) and left to ripen for up to 1 month, drying it under the influence of desert winds. And in the absence of cold, Shanklish was marinated in olive oil and stored in cool places for up to a year. The spices that we add to the cheese along with garlic give the taste a bright shade of young walnut / 250 ml.
