Description

A mixture of yolk and protein without additional ingredients is called egg melange. In appearance, it is a homogeneous thick mass of light yellow to orange (depending on the saturation of the color of the yolk, which is used for cooking). The manufacture of melange from eggs was established for a long time and simplified the life of many culinary, as the chicken eggs are fragile and it is easy to damage during transportation. The shelf life of the eggs themselves is not long (no more than 7 days without a refrigerator). Even with proper storage, problems often arise: low quality eggs, violation of the rules for transporting goods, incorrect temperature regime. Therefore, in the production of food, where such a mixture is needed in large quantities, it is preferable to use egg melange, or a dry egg powder. Condirates are much more convenient to buy on poultry farms ready to use the product, rather than spend time on breaking and mixing eggs. This should be cheaper the baking process, as it creates a waste-free fabrication (broken, small eggs, lost integrity and marketability, are not used).
