Description

The spice has nothing to do with real pepper, and it got its name only because of its sharp, burning taste. The sensation of sharpness does not appear immediately, accompanied by a feeling of coolness, slight tingling and numbness of the tip of the tongue. The unusual taste is complemented by the aroma of lemon combined with warm woody notes. Sichuan pepper is used to prepare a variety of Asian dishes, often in combination with hot chili. Having previously calcined in a frying pan, the spice is used (often mixed with salt) as a table seasoning. Sichuan pepper is a good addition to dishes of fish, meat (beef, pork, poultry), vegetables and rice. It is put in sauces, marinades and some desserts.
