Δαμασκηνοελιά, Plum Olive or "Plum Olive" is a revival of a very ancient Greek variety of olives, which is found even in the works of ancient Greek authors. Its cultivation began and flourished in Argolis and eastern Arcadia on the coast of the Argolic Gulf. This tree can produce the largest olive (up to 20 g). The Greeks call this berry "ΓαϊΔουροελιά" ("Gaidourelia" or literally translated "donkey olive"). This berry has a special shape and taste with a strong aroma and dense flesh. Specifically, these olives are prepared in the old, traditional way. Without chemical additives, only berries, water, salt and the time required for the natural fermentation of olives. The natural olive bitterness is removed without the use of soda, so the olives are aged for several months in special barrels with a small but valuable intervention (the secret of family tradition).
