Description

Ligurian (Tajas) olives are one of the most famous Italian olives, they have a pronounced fruity taste. Olives from Arma di Taja are an absolute pride and a part of Italian history. Back in the 7th century, Benedictine monks brought along with faith the skill of growing olives. Today, olives, along with almonds and figs, are the basis for the prosperity of the city. The harvest in Liguria begins in October –November and ends in January. Therefore, olives are heterogeneous in color and taste. The green fruits are more fleshy and dense, while the black ones have a bright buttery taste. Tajas olives in oil are perfectly combined with sun-dried tomatoes, capers, artichokes, with bresaola and cherry tomatoes. They are great for making salads, toasts, stewed vegetables and meat.
