Extra virgin olive oil (P.D.O.) is taken from fresh and healthy Sitia olives. Olives are the fruits of the olive tree, which have been grown in Crete for more than five thousand years. Extra virgin olive oil is the only vegetable oil that is produced using a fairly mild treatment, in which only physical methods are used.
